Chicken Curry Rice Salad

This is one of my own creations so  measurements etc are approximate

2 cups minute rice cooked and cooled

1/2 green pepper sliced into slivers

1 stalk of celery cut into very thin slivers on the diagonal

1/2 cup green onions chopped on the diagonal

1/2 cup mayonnaise (approximate)

1/2 to 1 tsp garlic finely chopped

1/2 to 1 tsp of curry powder or curry paste ( use to taste)

2 chicken breasts sliced thinly or 1-1 1/2 lbs of freshly cooked shrimp

salt and pepper to taste

blend everything together and add shrimp of chicken on top in a long baking dish arranging attractively.

Serve Cold.  Its yummy!

Serves 6 and great with a few slices of toasted garlic baguette
